L’escalope milanaise est une recette typiquement italienne. Facile et rapide, l’escalope de veau est finement taillée et cuite dans une panure à base de chapelure et parmesan.
Ingrédients :
pour 4 personnes
- 4 escalopes de veau
- 2 œufs
- 50 g de farine
- 200 g de chapelure
- 100 g de parmesan râpé
- 450 g de pâtes fraîches
- 1 citron
- Huile d’arachide
- Beurre
Les étapes :
- Déposez les escalopes de veau entre deux feuilles de papier cuisson puis aplatissez-les à l’aide d’un rouleau à pâtisserie. Salez et poivrez.
- Passez à la préparation de la panure. Dans une assiette, mélangez la chapelure et le parmesan râpé.
- Fouettez les œufs et réservez-les dans une assiette creuse. Passez les escalopes dans la farine et tapotez-les pour retirer l’excédent.
- Trempez-les ensuite dans les œufs puis terminez par la chapelure au parmesan. Replongez-les dans les œufs et de nouveau dans la chapelure.
- Passez à la cuisson. Faites cuire les pâtes fraîches dans un grand volume d’eau. Dans une poêle, faites chauffer un filet d’huile et faites cuire les escalopes à feu moyen.
- Au moment de les retourner, ajoutez une noix de beurre et arrosez-les avec le beurre fondu.
- Réservez-les dans une assiette puis égouttez les pâtes et graissez-les dans la poêle. Il ne vous reste plus qu’à dresser l’escalope milanaise avec un filet de jus de citron !
